This dataset has been corrected in regards to its biogenic C-Content. Due to the p-agg status of the dataset, parts of the foreground system and thus essential information on CO2 uptake and emissions are missing. However, during the correction the dataset was assumed to be cradle-to-gate and was complemented in its foreground system by the datasets listed in the ‘Complementing processes’-field in the process documentation. Be aware, in case you do not use these datasets to complement the foreground system, you have to check the C-balance again. Apples are adaptable to various climates, but they are best adapted to the cool temperate zones from about 35º-50º latitude. They have a more northerly range than many other tree fruits due to relatively late blooming and extreme cold hardiness. The temperature during the growing season is around 21 - 24° C. For optimum growth and fruiting, apple trees need 1000 - 1250 mm of annual rainfall, evenly distributed during the growing season.
The area under investigation to set up datasets, the Shaanxi province in China, has a monsoon climate in warm temperate zone. The annual average temperature is 13.3 degrees centigrade. The annual precipitation is 580 mm. The soil should be loamy and rich in organic matter with pH 5.5 to 6.5 and having proper drainage and aeration are suitable for cultivation.
Apples are harvested by hand to avoid bruising and reduction of fresh market quality grade. Fruiting begins 3-5 years after budding, although a few fruits may be produced in the 2nd year. According to the orchard start bearing from eighth year and the economic life of an apple tree exceeds 30 years. From eighth to seventeenth year, productivity goes on increasing and thereafter remains constant up to 30 years. The model considered the intensive agricultural processing, thus the lifespan was reduced to 23 years. Four years are needed till first fruits are harvested. The fruits are usually harvested before they are fully ripe. In reference to the the average yield was assumed to be 12 t per year and ha.
Juice extraction is very labor intensive, so six methods have been developed and used to reduce labor and increase yield from this operation. Apple juice manufacturers select the method that best meets their criteria. The hydraulic press uses a press cloth placed inside a square wooden rack. The cloth is filled with ground apple pulp then the cloth is folded to completely surround the pulp. A series of racks and cloths are stacked together in preparation for pressing. Pressing usually takes place in two stages. The first, at about 4,000 kPa, is applied rapidly to remove the “free run” juice. The second pressing, up to 19,000 kPa, is applied slowly and maintained to remove the remaining juice. The remaining pulp is normally given a second pressing to increase yield. Pomace from the presses is dried and used to make pectin or cattle feed. Apple juice yield from the presses ranges from 58 to 70 % of the mass of the fruit. The modeling plan is set up to 71% of concentration. The juice is passed over fine screens to remove coarse particles. Pectic enzymes are added to hydrolyze the water soluble pectin, which in turn reduces the viscosity making the juice easier to filter and concentrate. Ultra-filtration can be used to clarify the juice, or filter aid, usually diatomaceous earth, is added and the juice filtered to give a clear liquid. Screened juice can also be centrifuged to remove most of the small particles, leaving an opaque juice.
The juice can be evaporated to give juice concentrate, about 72 °Brix, or pasteurized at 88 – 90°C for 25 – 30 s to make single-strength juice. Apple essence and flavor compounds are used to add bouquet and increase consumer acceptance.
Apple juice is stored cold (4 – 6°C) to reduce development of browning and off flavors.
Background system:
Electricity: Electricity from renewable and non- renewable powerplants is modelled so that it represents a country’s specific consumption mix including transmission / distribution losses, own consumption, imports, emissions and efficiency standards, and energy carrier properties. Several factors are taken into account. (1) Energy carrier production - The exploration, mining / production, processing, and transportation of energy carrier supply chains are modelled for each country. The models account for differences among countries in production and processing, including crude oil production technologies, flaring rates, production efficiencies, emissions, etc. (2) Energy carrier supply - Each country’s specific energy carrier supply is modelled, taking into account domestic supply versus imports from abroad. Energy carrier properties (e.g. carbon and energy content), which can vary depending from where an energy carrier is sourced, are adjusted accordingly. (3) Power plants - Models are created to represent energy carrier-specific power plants and electricity generation facilities specific to different renewable energy resources. Energy carrier production and supply models are used to represent power plant inputs. Combined heat and power (CHP) plants are also considered. (4) Electricity grid - Models representing the electricity generation facilities are combined into a larger model that reflects a country’s consumption mix. The larger model accounts for a country’s production mix, internal consumption (e.g. pumped storage for hydro power), transmission / distribution losses, and imported electricity. The country model is also adjusted according to national power plant emission and efficiency standards, as well as the country’s share of electricity plants versus CHP facilities.
Thermal energy, process steam: The thermal energy and process steam supply is modelled to reflect each country’s emission standards and typical energy carriers (e.g., coal, natural gas, etc.) Both thermal energy and process steam are assumed to be produced at heat plants. Thermal energy datasets assume energy carrier inputs are converted to thermal energy with 100% efficiency; process steam datasets assume conversion efficiencies of 85%, 90% to 95%. The energy carriers used for the generation of thermal energy and process steam are modelled according to each country’s import situation (see electricity above).
Transportation: All relevant and known transportation processes are included. Ocean-going and inland ship transport as well as rail, truck and pipeline transport of bulk commodities are considered.
Energy carriers: The energy carriers and their respective properties are modelled according to the specific supply situation (see electricity above).
Refinery products: Diesel fuel, gasoline, technical gases, fuel oils, lubricants and residues such as bitumen are modelled with a parameterised country-specific refinery model. The refinery model aims to represent each country’s refining processes (e.g. emissions levels, internal energy consumption, etc.), as well as the country’s product output spectrum, which can vary significantly among countries.
